How to make an easy cake with only three ingredients that we surely have at home?
The respect produced by going out to buy food and the impossibility of finding certain products are awakening our imagination more than ever. We try to stretch the ingredients that we have at home to the maximum and we seek to make great elaborations with little. In this category is this cake for which only three ingredients are needed .
Surely we have them at home because they are pantry funds: eggs, flour and sugar. The result is in sight. A super fluffy and very light sponge cake . It does not have any fat, nor does it have yeast. For the dough to rise in the oven, you have to beat the eggs well and be careful when integrating all the ingredients, taking care not to lose the air incorporated with the shake. Some electric rods will be of great help.

We separate the whites from the yolks in two different containers. We beat the whites with some rods at low speed. When they start to foam and continue to beat, gradually add half the sugar. We continue beating for another six to eight minutes at high speed until we get a firm meringue.
Then, without the need to wash the rods, we beat the yolks together with the rest of the sugar . The color will change and they will turn pale, they will also increase in volume due to the amount of air incorporated. We stop beating when the rods draw a line on the yolks.
We add the flour, sifted, and the whites, beaten, to the container with the yolks. We will do it alternately and in three parts , integrating the flour or the whites with enveloping movements and a lot of smoothness. We do not add the following ingredient until the previous one is well incorporated.
We cover the base of a mold 18 cm in diameter and high walls with a disk of vegetable paper. We pour the dough into it and smooth the surface. We introduce in the oven, preheated to 160º C with heat up and down, and cook for 35-40 minutes or until we see that it is well cooked.
The cooking time will depend on the oven of each one, as well as the temperature that can oscillate 10º C up or down. Once the sponge cake has been removed from the oven, we allow it to warm up before unmolding . We can sprinkle with icing sugar at the time of serving, optional.
With what to accompany the easy cake with just three ingredients
Sprinkled with icing sugar or not, this is a plate of honor. The crumb of this easy three-ingredient cake is so fluffy it makes it perfect for dipping in a glass of milk, a cup of tea, or a latte. Breakfasts and snacks will not be the same with this cake on the table.
Coca flan, recipe for a moment of whim
As soon as I discovered this recipe for flan flan on Miquel Àngel’s blog, I knew I had to do it. Gluttony is very bad, especially if it enters through the eyes, as is my case, that’s why whenever a recipe catches my eye and I think it will be delicious, I have to make it without delay. In this case I was not mistaken and I am sure that, from now on, I will repeat this coca many times.
Regarding the original recipe, I reduced the amount of sugar a little , because in my family they are not sweet at all, but that is up to the personal taste of each one. To make it, I used a mold with a slit ready for fillers, so the cream layer was level with the edges, but you can use a “normal” mold and if the flan slips down the side of the coke I think the appearance will be even more tempting.
Ingredients for a 22 cm mold
We start by peeling the bananas, chopping them and putting them in a bowl to mash them with a fork. Later, we beat the eggs with the sugar until obtaining a foamy mixture . Mix the flour and yeast in a separate bowl and sift them over the mixture.
We beat everything with the electric rods. Add the yogurt, oil, milk and mashed bananas. We beat it all again. We put the mixture in a mold smeared with butter and cook it in a preheated oven at 170ºC for about 40 minutes or until you prick the dough with a needle it comes out clean .
We unmold the coca and let it cool. Meanwhile, we prepare the flan. We remove a cup of milk and bring the rest to a boil with the tablespoons of sugar. In the milk that we have removed we melt the envelope of custard and when the rest boils we add it.
Stir constantly until it boils again and thickens. Pour the flan over the cold coca, leveling the surface and let it cool well so that it sets before serving.
